If Marlee can’t wrap up the case, she may not have a berry merry Christmas . . .

WHITE CHOCOLATE CRANBERRY COOKIES
The pastry case at Marlee’s Berry Basket shop is always filled with berry pastries whipped up by her gifted baker Theo. In Hollyberry Homicide, the desserts are appropriately holiday themed. And delicious, of course. These white chocolate cranberry cookies were just one of the many berry treats sold at The Berry Basket during the eventful week leading up to Christmas.
½ cup unsalted butter, softened
½ cup packed light brown sugar
½ cup granulated sugar
1 tablespoon vanilla extract
1 large egg
1 ½ cups all-purpose flour
1 ½ teaspoons baking soda
1 cup dried cranberries, chopped
¾ cup white chocolate chips
¾ cup macadamia nuts, chopped
- Preheat oven to 375 degrees F.
- Line 2 baking sheets with parchment paper, OR cover with cooking spray.
- Cream butter and both sugars together with electric mixer until smooth. Add vanilla and egg. Mix well.
- Sift together the flour and baking soda.
- Gradually spoon flour mixture into the creamed sugar mixture.
- Stir in the cranberries, white chocolate chips, and macadamia nuts.
- Drop tablespoonfuls of batter onto prepared baking sheets, approx. 2 inches apart.
- Bake one sheet at a time until the cookies are lightly golden on top and the edges appear set. Approx. 8-10 minutes, but all ovens are slightly different, so keep checking.
- Cool on the baking sheet for 5 minutes. Then transfer cookies to wire cooling rack. Makes approx.. 2 dozen cookies.
- Can be stored in an airtight container for up to 2 weeks.
Yummy! How amazing do these cookies sound!? Can’t wait to give them a try for the family (or a least try and veganise the recipe so I can have one)
